Today was power cooking day, started off with blueberry muffins, which Louisa ate 3 throughout the day and maybe a couple cookies. It's the new MUFFIN MAN die, latest craze to start off 2010. Then off to make two other casseroles (Easy Mexican Casserole & Meat/Potato Casserole) to heat up throughout the week. Just finished off another one I made on Wednesday, MMMMM. Then to rock in the new year cooked my traditional pork and sauerkraut with homemade mash potatoes, peas, apple sauce and gravy. Mmmmm, one of my favorites. HAPPY NEW YEAR everyone!!! Great spending time chilling and relaxing with my girls and 'lil guy.

It sure is a Thermapen, great gift Kevin. Worked great as the pork stayed so moist, tough one as this was a pork sirloin roast so still bone in. Got it to 160deg F and wallah. FUN STUFF, plenty of more usage ahead, but def'n looking at improved casserole recipes.
